Tomato Relish
- 15 mL garlic
- 30 mL ginger
- 20 mL black mustard seeds
- 125 mL oil
- 2 × 440 g canned tomatoes
- 5 mL cumin powder
- 5 mL coriander powder
- 5 mL garam masala
- 5 mL tumeric
- chilli powder
- 5 mL salt
- 125 mL malt vinegar
- 125 mL sugar
Heat garlic, ginger and mustard in oil for 2 minutes. Take off heat, add spices and salt and stir in until foaming stops. Add tomatoes and return to heat until boiling. Add vinegar and sugar and simmer uncovered for 2 hours until reduced.
